LOCAL butcher Ashley Thomson took out third place in his category last weekend at the state finals of the State Sausage King Competition.
The competition, a creation of the Australian Meat Industry Council, welcomed 62 independent local butchers from over NSW and ACT to Darling Harbour, Sydney, be critiqued by a panel of expert industry judges after a round of regional heats.
While Mr Thomson won't go on to the National Competition, he's very pleased with nabbing a place in the lamb, mint and rosemary category.
"It's a big thing for butchers," Mr Thomson said.
"People have a bit of a giggle and a laugh at the 'Sausage King', but butchers put a lot of work into it."
The butcher, who took over Alstonville Quality Meats eight months ago, said it all came down to passion.
"I'm very passionate about what I can do," he said.
"We put a lot of pride into our snags and everything we do here (at Alstonville Quality Meats).
"You've got to be passionate about what you do to have a good product."
